My wife and I have a Direct TV dish and what we did was a triel and error way, she would stay inside with with the TV and I would be outside moving it until she got a signal.
Prior to that if there were other RV's with dishes I would look at their set up and angle and would try to set mine up as close as possible.
Since then I bought a Winegard Satellite Finder Meter Model SF1000 at Radio Shack for around $40 which you hook up between the receiver and the dish, the kit comes with cable, meter and instructions, hope this helps.

If you have access to the internet, sign on to the website of Dish or Direct to find the tilt angle, skew, and direction to point your dish. These paramenters are based upon the zip code of the location where the dish is located. jaimeerodriguez's suggestion of using a satellite finder is a good one, however I picked one up on Ebay for about $3 and it works fine. I am able to properly set up and aim the dish in about 1/2 hour.
